Now I will explain about hatching chilies or green chilies (Chile New Mexico)
Chili is one of the state vegetables of New Mexico, and is referenced in the New Mexico state question "Red or Green?".
New Mexico chile, usually growing from green to ripe red, is popular in Southwestern United States cuisine, including Sonoran and Arizona cuisine, and a staple of New Mexican cuisine. And also sometimes featured in Mexican cuisine.
The taste of this New Mexican green chili is described as slightly pungent, similar to shallots, or garlic-like with a slightly sweet, spicy, crunchy, and smoky taste.
Medium ripe red chili retains this flavour, but adds a bit of spiciness and bite.

Now I will share the stuffed hatch peppers recipe. Listen until it's finished, okay !!
Ingredients:
- 6-8 large Hatch Peppers
- 1/2 pound ground turkey
- 1/2 cup canned black beans, washed and drained
- 1/2 cup canned corn, washed and drained
- 1/2 cup of salsa
- 1 cup grated Monterey Jack cheese
- 1 tablespoon of olive oil
- 1/2 teaspoon cumin powder
- 1/2 teaspoon paprika powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
How to make:
Initial Preheat the oven to 200 degrees Celsius.
Then place the Hatch Peppers on a baking tray and roast in the oven for about 10-15 minutes or until the skins are wrinkled and black.
Once the Hatch Peppers are done, remove them from the oven and let them cool slightly.
While waiting, take the olive oil in a large skillet and heat it up.
Add the ground turkey and saute until cooked through and until browned.
Also add black beans, corn, salsa, cumin powder, paprika powder, salt, and black pepper to the pan, stir well and cook for 5-7 minutes or until all the ingredients are cooked and the flavors are absorbed.
Then Slice the Hatch Peppers lengthwise and remove the seeds. Don't throw away the skin.
Then stuff the inside of the Hatch Peppers with the turkey and vegetable mixture, and seal the skin back together.
And Arrange the filled Hatch Peppers onto a baking tray and sprinkle with grated Monterey Jack cheese.
Return to the oven and bake for about 10-15 minutes more, or until the cheese is melted and the filling is warm.
Serve immediately while still warm and enjoy!
