First we prepare the ingredients.

  • 5 orange leaves
  • 2 lemongrass stalks, freshen up
  • 2 turmeric leaves (optional)
  • 2 pandan leaves (optional)
  • Salt to taste
  • Cooking oil to taste

Here are the rendang seasoning ingredients:

  • 20 shallots
  • 10 cloves of garlic
  • 10 red chili peppers (or to taste)
  • 5 cayenne pepper (or to taste)
  • 2 cm ginger
  • 2 cm galangal
  • 4 cm turmeric
  • 4 cm cinnamon
  • 4 cardamom pods
  • 4 cloves
  • 1/2 teaspoon cumin
  • 1/2 teaspoon ground pepper
  • 1/2 teaspoon ground nutmeg

After all the ingredients are ready, let's get to how to make it.

Here's how to make it:

First cut the beef into pieces and wash it thoroughly. After that, boil in boiling water for 10 minutes, then drain.

While waiting for the meat to boil puree all rendang spices except lime leaves, lemongrass, turmeric leaves, and pandan leaves.

Then heat the oil in a wok. Saute the spices, lime leaves, lemongrass, turmeric leaves, and pandan leaves until fragrant.

Put the beef that has been boiled into the wok. Stir until evenly distributed with the spices.

Add coconut milk little by little while stirring gently so as not to break.

Cook on low heat until the sauce shrinks and the spices are absorbed into the meat, about 2-3 hours. Don't forget to stir to prevent burning on the bottom.

Once the rendang is cooked, add salt to taste. Stir well and cook for another 10-15 minutes until the spices are absorbed into the meat.
