  • 1 teaspoon of mustard

How to make:

  1. Combine the purple cabbage, green cabbage, carrots, bell peppers and onions in a large bowl.

  1. Combine quinoa and water in a small saucepan. Simmer over moderate heat for 15 minutes or until the water is absorbed and the quinoa is cooked through.
  2. Refrigerate the quinoa.
  3. Combine chilled quinoa, cucumber, tomato, shallots, parsley and mint in a large bowl.
  4. Combine olive oil, apple cider vinegar, lemon juice, salt and pepper in a small bowl. Stir well.
  5. Pour the sauce into the bowl with the quinoa and vegetables.
